The best part of all, it doesn’t even matter what season it is anymore, whether it is summer or winter. You are still going to enjoy this incredibly tasty, fragrant and comforting indulgence, that you can fully prepare by yourself inside your own home.
What goes better than the silky smooth texture of CHILLED coconut milk mixed together with tiny balls of COOLED sago delights.
Really can’t go wrong with those, but just wait till you’ve tasted the whole fusion topped with everyone’s favorite tropical fruit, MANGO!!!
The combination is simple…but seriously delicious!
Sago, also known as tapioca pearls has a unique texture that represents really small and almost transparent jelly balls. This flavorless ingredient, when combined with the sweet pleasant taste of coconut milk is a match from heaven.
Then of course, we got the mangoes too…YAY!
What makes this recipe even better is that it is so damn EASY to make and won’t cost you a fortune!
So let’s get down to some cooking business, shall we?
Ingredients
- Water - 600ml
- Sago / Tapioca Pearls - 90g
- Cold Water (for a special MAGIC trick !) - 400ml
- Cococut Milk - 400ml
- Water - 400ml
- Fresh Milk - 100ml
- White Sugar - 60g
- Medium Size Mango (diced & refrigerate) - 2 qty
- Mint Leaves (optional) - 4 leaves
Instructions
- Boil water (600ml) in saucepan on high heat and add sago (90g).
- Stir occasionally and continue to boil on medium high heat for 18 mins. (You'll notice some pearls are not cooked through with white dots inside, but don't worry about a thing...)
- Just add cold water (400ml) into the hot boiling (almost gluey) saucepan and watch closely as the white dots disappear instantly in front of your own eyes. See, told ya it's...MAGIC!
- Remove cooked pearls from saucepan, strain in cold running water. Store in a bowl, a container or whatever. Refrigerate for later use.
- Place a seperate cooking pot (small to medium size) on stove and turn on low medium heat. Pour in coconut milk (400ml), followed by water (400ml), add a bit of milk (100ml) and then finally the sugar (60g).
- Stir until it starts to bubble and mixture fully dissolved. Turn off stove, allow to cool and refrigerate the whole pot for a minimum of 2 hours .
- Now comes the best part. Start slicing both sides of the mangoes (2x), then use your knife skills to carefully cut and dice the golden flesh into an empty bowl. Pop it straight into the fridge.
- Don't you forget to slurp on those sweet juicy meats on the skins and seeds (It is a CRIME to waste them!!!)
- After 2hrs (minimum), take everything out of the fridge. Use a fork, spoon or your fingers to break and lossen up the sago pearls, then pour into coconut mixture. Now give it a few stirs to ensure there are no chunks of pearls sticking together.
- Add diced mangoes, but this time just a few gentle stirs. Dessert is ready to serve. Divide into serving portions (however you like it) and garnish with mint leaves (Optional).
